A good chopped salad is a mix of crunchy, creamy, and crispy textures bringing different flavor profiles with every delicious bite. This one does just that, and it’s tied together with a vibrant Green goddess dressing. Add more protein with cubed chicken or bacon, or you can keep it vegetarian by adding chickpeas. Use this as your template and go to town with your favorite salad bar pickings!

Instructions

Instructions are for 4 servings. Please modify as needed.

    Dressing

  1. Roughly chop the basil, chives, tarragon, baby spinach, scallion, and garlic clove.

  2. Add everything to a food processor with Greek yogurt, olive oil, lemon zest, lemon juice, and salt and pepper to taste.

  3. Blend until creamy.

  4. Taste and adjust seasoning if necessary. Refrigerate until ready to serve.

  5. Chopped salad

  6. Chop the baby gem lettuce, cucumber, eggs, and radishes. Add it all to a large bowl.

  7. Add 1/4 cup (60 ml) of Green goddess dressing per serving and toss gently. Sprinkle over sunflower seeds to serve.

Tips

This is a great salad to enjoy with your favorite protein, or packed into a low carb tortilla for a portable lunch.

The herb quantities are guidelines, so go with what you have on hand or stick to your favorites. The herb that we think makes this so special, is tarragon. But if you don’t care for it, feel free to leave it out.

Other high protein add-ins that would be great in this salad are chicken, turkey, bacon, chickpeas, black beans, feta, or mozzarella.

Add grilled chicken, turkey, shrimp, salmon, or tofu for even more protein, or toss in avocado, feta cheese, cucumbers, or extra herbs depending on what’s in season.
